Who hasn't heard of Tsoureki, a Greek brioche and famous delicacy? Tsoureki is a sweet brioche style bread, usually enjoyed during Easter. Its unique flavour comes from the spices used, mahleb and green cardamom! Mastic is also used in various areas of Greece! Suitable for vegetarians.
A little more on the process of making tsoureki...It is quite a tricky business we must admit! It takes 2 whole days for the dough to be ready for processing. We start by activating our starter something that takes about 2-3 hours depending on weather conditions. We let our milk infuse with the spices and orange zest. Then, we are ready to make our dough which itself rests and rises for the rest of the day. It is stored overnight at specific temperatures so that it absorbs the right amount of humidity.
Day 2... Our dough comes back to life as we bring it to room temperature for 2 hours minimum. When it is time, we fill the dough with different flavour mix prepared on the day and then braiding starts! Of course our braids need to rest as well leading us to at least 3 more hours of waiting... Our tsoureki is ready to go in the oven when it's three times its size! Baking is followed by cooling down and glazing, making sure you are provided with an outstanding product! As Jean-Jacques Rousseau put it, “Patience is bitter, but its fruit is sweet.”.
