Some more information on our pitas and why they are so special... Our priority is for you to discover the stories of the people behind these delicacies. Yayakas can be found all over Greece, lovingly preparing food for their grandkids. It is that love that inspires us to spoil you, like grannies usually do, and offer you delicious pitas that can keep you going throughout the day. To do so, we base our recipes on the star of Greek cuisine, our very own extra virgin olive oil, produced by our families in Messinia (Peloponnese) and Halkidiki (Southern Macedonia) region, with acidity not exceeding 0.5. Our pies are made in the old fashioned but nonetheless artisan way: hand-rolled on a wooden board, with a slim wooden stick that gives each phyllo the perfect size, shape and texture. Each pita has 10 layers of phyllo on which olive oil is drizzled, perfectly matched with a filling made with fresh ingredients. Storage: Prassopita (leek and feta pie) is delivered to you frozen. It can be stored in the freezer for a month if you do not choose to cook it straight away. You can bake it from frozen for about an hour at 170 degrees Celsius in a pre-heated oven. If the pita has defrosted same rules apply in terms of baking. You can turn up the temperature by the end of your baking time if you would like some extra colour on your pita. Allow it to cool down for about 10 minutes while having it covered with a kitchen cloth/towel. After that, you are ready to go! This item can be kept in room temperature for up to 24 hours, covered (not during summer when there is heat as it contains dairy). It can also be stored in the fridge for up to 3 days, again covered with a lid. Please allow it some time to come to room temperature when you take it out of the fridge, so that you can enjoy its flavour to the fullest! You can microwave it for some minutes to warm it up or even reheat it in the oven!
